Garlic Buns


I have been keeping to a menu for our meals lately, and with feeding our big family this week (10 kids) I started baking again. I needed garlic bread for our bolognaise one night but couldn't get to the shop. I planned to make Elissa's herb rolls but can you find the recipe when you need it the most? Yeah right!!

So, I dove into my Edmonds cook book and tried this recipe, It was for white bread but I amended it a little by 1. adding crushed garlic and 2. rolling them into buns not bread.

If I had realized how good they were going to be I would have made 3 batches instead of 1. They were amazing!! You have to try these.


Recipe

5 cups High grade flour
1 teaspoon sugar
1 teaspoon salt
2 tablespoons surebake Yeast (or any yeast)
3/4 cup cold water
2 tablespoos oil
3/4 cup boiling water
oil

Egg wash - 1 egg yolk   and 1 tablespoon water

Method.

Combine 2 cups of the flour, sugar, salt and yeast in a large bow, add cold water and oil, immediately followed by boiling water. Stir to a smooth paste and stand 2-3 minutes. Gradually mix 2 cups of flour into the yeast mixture.
When flour is mixed in turn out on to a lightly floured surgace, using part of the reserved cup of flour for this. Keneed dough until smooth and elastic. (this is where I put in the garlic - try anything you like) If the dough is still stick, add a little of the remaining measured flour, kneeding until smooth and elastic, or until dough springs back when lightly touched. Lightly brush large bow with oil. Place dough in Bow,. Brush top with a little oil. Cover. Put in a warm place until double in size. Punch dough dwn in the centre, Careflly take dough oyt of bowl and turn onto a lightly floured surface. Kneed for 5 minutes. Divide dough in half (or for me I divided into rolls - I made 21 dinner rolls) Shape each protion into a ball. Place two balls side by side in a greased deep 22 cm loaf tin. (I rolled them into dinner roll balls and sat them in a square formation - you can put them in a circle too if you want to make them look pretty for the table) Cover. Leave in a warm place until double in size or reaches top of tin (for loaf) Brush surface with eg wash. If wished sesame sees, oatbran or poppy seeds can be sprinkeld on top. (I think I would have sprinkled parmesan cheese on if I had it - for the garlic flavor) bake at 200oC for 30 minutes or until loaf sounds hollow when tapped on base of bread - or with the rolls until they are cooked - spring back when touched.

teaching independance

I like to think I encourage independance in our home. Helping our kids to be confident that they can do many things on their own. making themselves something to eat is one of these things. For the older boys, I have taught how to cook, the younger ones it is making a sandwich, or whipping cream, making cordial drinks (which they are sooo much better than me now)  even mixing pancake mixture.. Since we watched the Junior Masterchef competition on TV, our kids have really enjoyed getting in there. Arama has made dinner for almost the last week and a half. It was first a trade off so he wouldn't do the dishes after but he seems to be enjoying it. I am more than happy to accomodate too as they will be able to feed themselves when they get bigger - mission etc. Hikawera has also risen to the challenge or mastering the skill of getting himself something to eat. Flashback - Rotten teeth?

I was putting the boys to bed the other night, and as usual you go through the usual teeth toilet, bed etc... I asked Rakai, did you brush your teeth? He said no. (He was honest) So, I said, "do you want your teeth to fall out while you are asleep?" He answered with a sad look on his face, "yes, cause then I can get some money". Oh that was such a Rakai thing to say!! I had to counter that (trying not to laugh) by telling him that the tooth fairy doesn't give money for rotten teeth! Then, Hikawera pipes up saying he got $5 for a rotten (dead actually from being banged) tooth that the dentist had to pull out. I had to go into real damage control then!! Rakai comes out with the funniest things sometimes. He is golden.
